My fresh Mahi Mahi
Fresh, just the way it suppose to be when you cook with sea food. A beautiful thick Mahi Mahi covered with roasted cherrie tomatoes, roasted asparagus shallots and balsamic sauce, so moist, juicy and very healthy. Nothing but healthylicious!
Well, lets make this simple as how it was for me. I cut the cherry tomatoes in half , set them on a baking sheet, drizzled some olive oil, some dry oregano, little salt (I am really particular with salt, just use the necessary and kosher if possible) and pepper. oven 350 for 40 minutes or until they start to show a crisp skin look.You will need a nice fresh Mahi Mahi fillet, season with salt and pepper and then I just seared on a skillet with a tbsp of olive oil medium heat for approximately 2 minutes each side. Done.Sauteed the asparagus on a skillet with a little olive oil about 1/2 tbsp little salt and peeper. Cut shallots preferably thin slices and some fresh cherry tomatoes.Lets go to the dressing; in a small bowl whisk 1 tbsp of balsamic vinegar with 3 tbsp of extra virgin olive oil salt and pepper . Make sure to mix it very well so it will become an emulsion.Lets set this delicious meal on the plate putting the Mahi Mahi first and cover it with the roasted tomatoes then the asparagus on the side with fresh tomatoes and shallots, drizzled balsamic sauce around or wherever you think is good, garnish with some parsley and enjoy it!
