In a bowl mix cooked Quinoa about 2 1/2 cups with 1 egg (beaten) 1/4 cup of; chopped parsley, chopped chives, chopped spinach leaves, chopped red onions and a small clove of garlic chopped as well , some oregano, kosher salt, pepper. Shape the mix into small patties and take to the oven, bake until golden (about 10/15 minutes). Assemble a fresh vegetable salad with cucumber, fresh mint, cherry tomatoes and a yogurt dressing ( 3 tbsp natural yogurt. pinch of salt, pepper, chopped fresh dill and extra virgin olive oil ). I love my fresh healthy Quinoa dish.
