I didn't have to think to hard in what to eat for lunch... It is mango's season so I had mangoes and all the rest of ingredients at home.
whole wheat tortillas
1 roasted chicken breast ( boneless, no fat or skin ) *see my way to cook chicken breast.
fresh romaine lettuce and spinach leaves
1 fresh tomato
Lime yogurt dressing:
1 cup of Greek yogurt
1 tbsp of fresh chopped cilantro
1 tbsp of minced shallots
3 tbsp olive oil
dash of salt
dash of pepper
Slice chicken, mango, tomato set all in a large plate with the green leaves.
In a medium bowl add the yogurt, the juice of one lemon or lime, minced shallots, chopped cilantro, olive oil, salt and pepper.Whisk for about thirty seconds or so til the point of an emulsion. Chill before serving.
Warm up tortillas on a skillet or oven and star to assemble your wraps.
* My favorite way cook chicken breast is simply seasoning with salt and pepper.On a skillet sear each side for a minute with just a little bit of olive oil and take to a preheated 375 oven for 20 minutes, let rest and you will have the juiciest chicken breast ever. I always have this roasted chicken breast ready on my fridge which I use for sandwiches, wraps, soups and salads.
