My Magic Sauce

I call it Magic Sauce because it goes with almost anything, on a toast, pasta, grilled fish, rice, salads... name it.
I always have this sauce ready, it is delicious, healthy, fresh easy to make and only takes ten minutes.

Getting the ingredients together as you see there are not to many;

2 cups cherry tomatoes
1 small shallot
1/3 cup pitted Greek Kalamata olives
1/3 cup good extra virgin olive oil
1 tbsp balsamic vinegar 
1/3 cup capers
1 tsp dried basil
pinch cayenne
pinch turmeric
salt and pepper

Cut tomatoes in half or as desired, I like in big pieces after all they will shrink as they marinate. Thinly  slice shallot, chop capers and kalamatas olives. In a bowl mix together olive oil, dried basil, turmeric and season with salt and pepper according to your taste, (I never use to much salt), whisk all together then add the balsamic vinegar whisk well.
In a medium bowl mix well the tomatoes,  olives, capers, shallots and add the dressing. Mix well let the sauce sit for 10 minutes or so to get all the flavors and juices together. Serve over a grilled fish, pastas, cooked Quinoa, salads or on a slice of a rustic whole wheat bread topped with feta cheese, my favorite. Sometimes I add anchovies and fresh basil. It is a delicious sauce and my friends love it!
